This feast day marks the start of Lent in the Eastern Orthodox church calendar, and is an important period for fasting. The Greek orthodox Lent lasts 40 days, which is the length of time that Jesus spent fasting in the wilderness. Clean Monday is a day of strict prayer and people eat only the most simple of foods, including a flatbread known as Lagana in Greece which is eaten only on this day.
