Delicious morel mushrooms from the local food market. These are farmed, it’s still a bit early in the year for wild morels.

I cooked these in butter and served them alongside grilled chicken, boiled potatoes and a sauce made from the chicken fat and white wine.

I wondered which wine would work best with morels. A white sangiovese from Italy worked pretty well. Any other suggestions?
